1/2 - 1 lb ground beef (I use 1/2 pound of ground turkey)
1 medium onion, chopped
1 cup frozen or fresh corn
1 8oz package cream cheese
1 cup milk
1 can cream of mushroom soup (**optional - double your milk if you do not include the soup)
4 1/2 cups uncooked wide egg noodles
In a large skillet over medium heat, cook the beef and onion until meat is no longer pink. Add the corn, cream cheese, milk, optional soup, and pepper. Stir until cream cheese is melted.
Meanwhile, cook the noodles according to package directions; rinse and drain. Add to skillet and heat through.
** I have been working on not using cream of mushroom soup in my cooking as much anymore. I have found that adding additional milk to this recipe makes it just as delicious!
