As you can probably tell by the last few posts of recipes - I REALLY like things with cream cheese! I promise I do have dessert recipes that are not in a cheesecake type form. As long as I am on a roll with the cheesecake theme this week here is my favorite recipe for cheesecake that is easy too! Now I am picky on my cheesecake. No jello type mixes for me. I like it to be dense and thick, if you know what I mean. :)
Now that I have you drooling, here is the recipe...
April's Easy Cheesecake
1/2 cup butter
1/4 cup sugar
1 1/4 cup graham cracker crumbs
1/4 cup sugar

Combine ingredients and pat firmly on bottom of 9 inch spring form pan.
3 (8oz) pkgs cream cheese
1 (14oz) can sweetened condensed milk
4 eggs
2 tsp vanilla

In a large bowl, beat cheese until fluffy. Add sweetened condensed milk. Beat until smooth. Add remaining ingredients and mix well. Pour into prepared pan.
Bake 1 hour and 5 minutes @ 350 or until cake springs back when lightly touched. Cool to room temperature and chill.
For Chocolate Cheesecake:
Add 8-12 oz melted chocolate chips to the batter before pouring it into the pan.
