I found the recipe for Pumpkin Bread In A Bowl at Chocolate Covered Katie. I decided to add a chocolate twist to it and make it Trim Healthy Mama friendly. I like this oatmeal so much I have been known to eat it anytime of the day, not just for breakfast!
This recipe is an E that could easily be a cross over by adding some unsweetened coconut or almonds or chocolate chips. If you are like me you throw in a small handful of chocolate chips and still tell yourself it is close enough to an E. Shh, don't tell the THMs! ;)
Chocolate Oatmeal - E
(2 servings-thanks Stacy for catching that)
1/3 cup pumpkin
3/4 cup unsweetened almond milk
2 Tb cocoa powder
3/4 cup dry rolled oats
1/2 tsp vanilla
dash of salt
4 shakes or more stevia
Place the pumpkin, almond milk, cocoa powder, vanilla, salt, and stevia in a bowl. Mix well. Microwave on high 1 minute. Add oatmeal and stir. Let sit for a bit to thicken.
Now quick throw in those few chocolate chips. ;)
