Chicken Fajitas

This is not the least expensive recipe I have because of the peppers depending on the season.  It is delicious and full of nutrition!  It is perfect in the summer if you have peppers to use from the garden.  I have also stocked up on peppers when they are on sale, washed and sliced them, and put them in the freezer.  You can take them straight from the freezer for this recipe and they work great.

1 pound chicken, cooked and shredded
1 Tb olive oil
1 each green, red and yellow bell peppers, thinly sliced
1 medium onion, thinly sliced
2 cloves garlic, minced
1/4 tsp salt
1/2 tsp cumin
1/2 tsp pepper
1/4 cup lemon juice
8 flour tortillas, warmed
sour cream

In large skillet heat oil.  Add chicken, peppers, onion, garlic, salt, cumin and pepper.  Cook and stir until peppers are crisp tender.  Stir in lemon juice and cook 1 minute longer.  Serve in tortillas.  Add salsa and sour cream to each serving.
